The compound is unattested in the MED, though the form can be found in a c1503 citation included in the OED (Salt smolt for the barel iij. d’.). The term smolt can be a collective used to refer to young salmon (n.1) but also to lard, fat (n.2). The OED2 includes the form salt smolt in the entry for ‘lard, fat’.
