The etymology of the term remains unclear. It could be interpreted tentatively as a compound of tarte1, with the second element possibly poleine1 (although the senses of 'pointed and curved shoe', 'squirrel-fur' or 'Polish' are not easily applicable here) or perhaps Latin POLLEN (suggesting a pie made with a crust of fine flour).
