Latin stincii is frequently glossed with tench as, for example, here in the C manuscript. The form stenche is probably best explained, not as tenche with a redundant s- initial, but as a vernacular reflex of Latin stincus, which the DMLBS includes as scincus. In that case, the term may refer to a kind of fish resembling the water lizard, with an etymology derived from Greek σκιγκος (‘lizard’). However, both interpretations are possible.
